Smoked Atlantic Salmon Linguine
8oz. Smoked Atlantic salmon filets 250g.
8oz. Dry linguine pasta 250g.
1Tbsp. Olive oil 15ml.
2tbsp. Butter 25ml.
1 Yellow pepper, diced 1
1 Red pepper, diced 1
2 Green Onions 2
1/2cup Whipping Cream 125ml.
12 Fresh chive stems, chopped 12
2 Tomatoes, peeled and diced 2
2 Fresh Basil leaves 2

Dice the smoked Atlantic Salmon fillet and set aside. Place 2 quarts (or liters) of water in a pot with salt and the oil and bring to a boil and then add the linguine. Cook until the linguine is tender but still firm then drain. In a large skillet, over medium heat, melt the butter and sauté the peppers and onions. Add the cream, chives, diced tomatoes and smoked Atlantic Salmon when the onion has begun to be translucent and stir until everything is heated, season to taste with salt and pepper. Add the drained linguine and sauté lightly. Put into a serving dish and garnish with fresh tomato slices and Basil leaves and serve.
